(Vegan Green Papaya Pickles) allium-free
純素腌过的青木瓜
Pickled papaya slices is one of my favorite childhood snacks. I could eat many helpings of these appetizers. They are so so good! Well if you do need some milk stimulators, pickled papaya is one of the choices to eat rather than always papaya fish 🍜. It’s so easy to do. All you need is papaya sliced to about thickness of 1.5-2mm thick, rubbed with salt, water squeezed out and then preserved with sugar and vinegar. Placed on glass bottles to be chilled. Wala, it is done! Take it out anytime to eat it for fun or eat it with porridge. That’s what I do!
这个是我家里奶奶的一个本能。虽然不懂她如何做,可我因为我吃过所以会把它做出来。青木瓜对于那些刚生孩子妇女不够奶,它会增上的吃奶的功能。青木瓜对尿酸也好。有一位尊长和我说他们用青木瓜煮来对治尿酸的。很容易做,可是很多工在切木瓜,不可以太厚,不好吃,然后要用盐来搅拌,放着25-30分钟,搅拌后,它的水分出来,挤出来所有水分就可以。
(料)
Ingredients:
Sliced whole papaya into thickness about 1-2mm thick. Rubbed with salt.
1 整粒青木瓜,去皮,去种子,切薄片。
2 Chillies ( 2 large one; you may use chili padi if you want extra spiciness)
2 條紅辣椒🌶️,你要再辣可以自己加小辣椒。
Sugar add to boiled vinegar:water till it’s sweet enough for you.
糖分要加進米醋和水。
Water and vinegar (1:1 ratio)
(米醋和水混合要 1:1)
300ml water
(300克水)
300ml vinegar
(300克白米醋)
300g of sugar.
(300克糖)
Instructions:

- Rub salt on papaya. Leave to sit about 20 mins
(在切好的木瓜片上,用鹽巴撒上去,用手攪拌均勻。放一邊,20-30分鐘後在用 - Squeeze papaya as dry as you can such that when you take a slice and eat it, you feel a crunch.
(把木瓜片拿出來,把所有的水分用手擠出來,擠出來後,你可以用手拿一個來嚐一嚐,看木瓜薈萃嗎?不夠翠代表你方的鹽巴不夠或你太快把它拿出來了。要放這久一點再擠出來) - Boil water and vinegar in 1:1 ratio and dissolve sugar tablespoon by tablespoon till your desired sweetness level.
把水滾,如果你用的水分是300毫升,那你的百米粗也要一樣。那叫1:1。 - Let cool the vinegratte and pour over your papaya and chillies and store them up in glass bottles to chill.
讓水和米醋的湯冷下來後,把它倒進洗好裝著處理好的木瓜片的玻璃瓶子。
