
Vegan Vietnamese Pho (with alliums)
五腥素越南🇻🇳粿条汤
This dish is normally made with beef in Vietnam but it can also be done vegan. Just as good and more compassionate to animals.
It is a one of my family favourites. It is also possible to be done very deliciously without alliums but my family likes it. You can remove it and replace with fruits in the soup. More importantly the other spices are there. It is normally served with kway teow, garnished with mint leaves, basil leaves,pickled onions and lime slices. It is meant to have a herbal smell with a tinge of sourness from the lime and a very flavourful soup from the fruits and vegetables used to flavour the soup. It’s my husband and elder son’s all time favourite and mine. When you are sick especially, these type of food is what you would crave for. (这道菜通常在越南用牛肉来做汤底。可是我们可以把它变成素的。好吃又不伤害众生。这道菜在我家里可是很热爱的。那些吃纯素的人也可以做,不放葱也是很好吃,放多点蔬菜水果在汤里代替葱也可以的,主要的其它香料不可缺少。通常它的汤是倒在一碗粿条里,上面的伴料有薄荷叶,九层塔,豆芽,您喜爱的菜,酸酐,腌过的洋葱。它是那种汤有很香的香料味道,汤带着水果蔬菜甜味,非常的开胃,健康,因为它里头的薄荷,九层塔都是有医药价值的。生病时,感冒时,不舒服时,这种食物是您期待的。
(A) spices to be roasted (准备要烤的香料)
2 big white onions halved (2粒大白葱切成两半)
5 slices of ginger (5片姜片)
8-10 green cardamoms (8-10粒 孜然种子)
2 long sticks of cinnamon (2 长条的桂皮)
3 star anises (3粒八角茴香)

1.)Roast all in(A) until the onion starts to brown and spices give off a good aroma and start crackle.
(把所有香料在(A)里烤到大葱有点焦,香料开始发出 kiak kiak 的声音,开始很香很香…
2.)Next prepare a spice bag, put all except onions into the spice bag. Onions are later put aside for the soup stock.
(准备一个香料带,然后把所有的香料除了大葱,放进香料带。大葱放一边,等一下要用在做汤底)


3.)Set aside the onions and the spice bag, later you will put these into the soup stock. (把準備好的香料带和大葱放一边,等候做汤底时才使用)
(B) Soup base preparation ( 汤底料理)
Ingredients needed(汤底料)
1 white radish chopped into pieces (1条白萝卜切成小段)
1 red carrot 🥕 chopped into pieces (1条胡萝卜🥕切成小段)
1 apple 🍎 (一粒苹果, 对半切,然后切成几片)

any other veges like corn, cabbages and balance fruits like pears and apples can go in, ,makes soup only sweeter. (自己家里所有蔬菜🥬水果剩下的,苹果,🍐,都可以放来增甜汤底。)
4.) Bring water to boil, in a huge pot, look at my photograph you will know, because we need to put many fruits and veges in. (准备一个锅,像我照片里那样,把水滚了把所有蔬菜水果放进去滚)。
5.) Put in spice bag done in A and the 2 roasted onions and boil it for 3 hours on low fire. (把在(A)准备的香料和2烤过的大葱,放进去汤里慢滚3 小时)
6.) adjust the seasonings of your pho with some sugar, salt,mushroom seasoning)
(最后,调味- 糖,盐巴,香菇粉)

Garnishings (伴料)
Mint leaves (薄荷叶)
Basil leaves (九层塔)
Lime slices (酸酐)
Fried beancurd (炸豆干)
Vegetable of your choice (您喜爱的菜)
Pickled onions (腌洋葱🧅)

-3 sliced onions, add salt first and then later vinegar and sugar. (把一些洋葱切片,然后撒盐,用手搓一搓,然后加米醋,加糖)
